      How to Cook Organic Grass-Fed Beef Brisket Point: Slow Cooking for Juicy Perfection

      Brisket point is richly marbled and packed with flavor, making it ideal for slow cooking or smoking. These methods ensure the meat stays moist while breaking down the connective tissue, creating tender, mouthwatering results.



      Why Slow Cook or Smoke Brisket Point?

      Brisket point is a slow-cooking cut because:

      • Marbling and Fat: Slow cooking or smoking renders the fat, keeping the meat juicy and flavorful.
      • Connective Tissue: Heat and time soften the tough fibers, resulting in tender slices or shredded brisket.
      • Flavor Absorption: Both braising and smoking allow the brisket to absorb rich, bold flavors.

      Whether braising in liquid or using the smoker, the brisket point shines when cooked low and slow.



      Recipe 1: Beginner/Intermediate- Braised Brisket in Liquid

      Ingredients:

      • 2.5–3.5 lbs Organic Grass-Fed Brisket Point
      • 2 tablespoons olive oil (optional, for stovetop searing)
      • 1 large onion, sliced
      • 3 cloves garlic, minced
      • 3 large carrots, cut into chunks
      • 2 cups beef broth
      • 1 cup dry red wine (or substitute with additional broth)
      • 1 (14 oz) can diced tomatoes
      • 1 tablespoon tomato paste
      • 1 teaspoon dried thyme
      • 1 teaspoon smoked paprika
      • 1 bay leaf
      • 1/2 teaspoon salt (adjust to taste)
      • 1/2 teaspoon black pepper



      Instructions

      1. Prepare the Brisket Point

      • Pat the brisket dry with paper towels and season with salt and pepper.

      2. Build the Braising Liquid

      • Combine onion, garlic, carrots, beef broth, red wine, tomatoes, tomato paste, thyme, smoked paprika, and bay leaf in your cooking pot or slow cooker.

      3. Choose Your Cooking Method

      • Slow Cooker:

        • Place the brisket in the slow cooker and pour the braising liquid over it.
        • Cook on Low for 8–10 hours or High for 5–6 hours, until tender.
          Check for doneness with fork. If fork does not slide in without much resistance, keep cooking until soft.

      • Stovetop (Dutch Oven):

        • Place the brisket in a large pot with the liquid. Bring to a boil, then reduce to a low simmer. Cover tightly and cook for 3.5–4 hours, adding more broth if needed to prevent drying.
          Check for doneness with fork. Check for doneness with fork. If fork does not slide in without much resistance, keep cooking until soft.

      • Instant Pot (Pressure Cooker):

        • Place the brisket and liquid in the Instant Pot. Set to High Pressure for 80 minutes. Allow a 15-minute natural release, then quick release any remaining pressure. Check for doneness with fork.

      4. Serve

      • Remove the brisket and let it rest for 10–15 minutes before slicing against the grain.
      • Serve with the vegetables and braising liquid, or reduce the liquid into a thicker sauce by simmering it on the stove.



      Recipe 2: Advanced - Smoked Brisket Point

      Ingredients:

      • 2.5–3.5 lbs Organic Grass-Fed Brisket Point
      • 2 tablespoons yellow mustard (as a binder)
      • Dry Rub:
        • 2 tablespoons kosher salt
        • 2 tablespoons black pepper
        • 1 teaspoon smoked paprika
        • 1 teaspoon garlic powder
        • 1 teaspoon onion powder
        • 1/2 teaspoon cayenne pepper (optional, for heat)
      • Spritz (Optional):
        • 1 cup apple cider vinegar or apple juice mixed with 1 cup water



      Instructions

      1. Prepare the Brisket Point

      • Pat the brisket dry and coat it lightly with yellow mustard.
      • Mix the dry rub ingredients and apply liberally to all sides of the brisket.

      2. Set Up the Smoker

      • Preheat your smoker to 225°F (107°C) using hickory, oak, or cherrywood.

      3. Smoke the Brisket

      • Place the brisket on the smoker, fat side up. Insert a meat thermometer into the thickest part of the brisket.
      • Smoke for 4–5 hours, spritzing with the apple cider vinegar mixture every hour to keep the meat moist.

      4. Wrap the Brisket

      • Once the brisket reaches an internal temperature of 160–165°F (71–74°C), wrap it tightly in butcher paper or foil to prevent drying out. Return it to the smoker.

      5. Finish Cooking

      • Continue smoking until the brisket reaches an internal temperature of 195–205°F (90–96°C), typically another 2–3 hours. Check for doneness after hour 2.

      6. Rest the Brisket

      • Remove the brisket from the smoker and let it rest, wrapped, for at least 1 hour to allow juices to redistribute.

      7. Serve

      • Slice against the grain and serve with your favorite BBQ sauce, cornbread, or coleslaw.



      How to Know When Brisket is Done

      • Fork-Tender: The meat should pull apart easily with a fork.
      • Internal Temperature: For braised brisket, aim for 195–205°F (90–96°C) for ideal tenderness. For smoked brisket, the same range ensures the connective tissue has fully broken down.
      • Juicy Rest: Let the brisket rest for at least 10–15 minutes (braised) or 1 hour (smoked) to lock in moisture.

      I pressure cook in my Our Place dream cooker with potatos, carrots, onions, garlic and Hoisin sauce. The meat is so moist and tender just melts in your mouth. Delicious.
