      How to Prepare Organic Grass-Fed & Finished Beef Suet

      Our Organic Grass-Fed & Finished Beef Suet is a high-quality, nutrient-dense fat that can be used for rendering into tallow or frying as part of a meal. Suet is the hard fat from around the kidneys, prized for its clean, mild flavor and high smoke point, making it perfect for cooking, baking, and adding to dishes for extra nutrition.

       



      Why Use Beef Suet?

      • Nutrient-Rich – High in healthy saturated fats, omega-3s, and fat-soluble vitamins (A, D, E, K).
      • Long-Lasting Cooking Fat – Once rendered into tallow, it becomes shelf-stable and perfect for frying, roasting, and baking.

      How to Prepare a Small Batch of Suet for Rendering or Frying (8 oz Example)

      If you’re only using a smaller amount of suet, such as 8 oz (half of a 1 lb pack), follow these safe handling and storage steps to ensure freshness, prevent waste, and maintain food safety.

      1. Thaw Safely in the Refrigerator

      • The safest way to thaw suet is overnight in the fridge. This prevents the growth of bacteria and histamines that can develop if left at room temperature.
      • Do not thaw suet on the countertop—this can lead to spoilage and bacterial growth.

      2. Portioning the Suet for Immediate & Future Use

      • The next day, take the suet out of the fridge and place it on a clean chopping board.
      • Using clean hands and a sharp knife, cut the 8 oz portion you plan to use today.
      • Place the remaining 8 oz into a freezer bag (or divide into smaller portions if desired).

      3. Store the Remaining Suet in the Freezer

      • Label the freezer bag with the date for easy tracking.
      • Suet can be kept frozen for up to 6 months in an airtight bag or container.
      • When ready to use, repeat the thawing process in the fridge overnight.

      This method ensures maximum freshness and food safety, while making it easy to use smaller amounts of suet when needed without waste.

       




      Method 1: How to Render Suet into Tallow (Step-by-Step Guide)

      Rendering suet into pure tallow provides a neutral, high-quality cooking fat that can be stored for months and used for frying, sautéing, and baking.

      Key Tips

      • Use Low Heat – Too much heat makes the suet brown or develop a strong flavor.
      • Avoid Overcrowding – Adding too much at once slows down the rendering process.
      • Strain Well – Filtering removes small bits that can cause spoilage.

      Ingredients & Equipment

      • 2–3 lbs Organic Grass-Fed & Finished Beef Suet, finely chopped or ground
      • ½ cup water (optional, prevents burning in the early stages)
      • Heavy-bottomed pot (cast iron or stainless steel) or slow cooker
      • Fine mesh strainer or cheesecloth
      • Glass jar or heat-proof container for storing the rendered tallow

       




      Rendering Method 1: Stovetop (Low & Slow in a Pot)

      1. Prepare the Suet

        • Cut the suet into small cubes (½-inch) or grind it in a food processor for faster melting.
        • Remove any large pieces of meat or connective tissue.
      2. Start on Low Heat

        • Place the suet in a heavy-bottomed pot over low heat.
        • Add ½ cup water (this evaporates but helps prevent burning).
        • Stir occasionally and let it melt slowly.
      3. Simmer & Stir Occasionally

        • Let the fat melt for 1.5–3 hours, stirring every 20–30 minutes.
        • The solid pieces (cracklings) will begin to brown, and the liquid fat will become clear.
      4. Strain the Tallow

        • Pour the hot fat through a fine-mesh strainer or cheesecloth into a glass jar.
        • Discard any browned bits (or save them as crispy cracklings for snacking).
      5. Cool & Store

        • Let the tallow cool at room temperature. It will harden into a creamy, white solid.
        • Store in a sealed jar:
          • Room temperature: Up to 1 year
          • Refrigerator: 2 years +
          • Freezer: 2 years + 




      Rendering Method 2: Slow Cooker (Easiest & Hands-Off)

      1. Place chopped suet in the slow cooker.
      2. Set to low and cook for 4–6 hours, stirring occasionally.
      3. Once fully melted, strain and store as above.





      Method 2: How to Fry & Use Suet in Meals

      Beef suet isn’t just for rendering—it can also be fried for crispy, golden bites or used to add rich flavor to meals.

      How to Fry Suet for a Crispy Snack or Meal Addition

      Ingredients

      • 1 lb Organic Grass-Fed & Finished Beef Suet, cut into small cubes
      • ½ teaspoon sea salt (optional)
      • Skillet or cast-iron pan



      Instructions

      1. Cut the Suet – Slice into ½-inch cubes for even cooking.

      2. Heat the Pan – Warm a dry cast-iron or non-stick skillet over medium-low heat. (No need to add oil—suet naturally releases its own fat.)

      3. Fry the Suet Slowly – Add the suet cubes and stir occasionally. Cook for 10–15 minutes, allowing the fat to render and the pieces to turn golden brown and crispy.

      4. Drain & Season (Optional) – Use a slotted spoon to remove the crispy bits and drain on a paper towel. Sprinkle with sea salt if desired.

      5. Serve or Store

      How to Know When Suet is Rendered or Properly Fried

      • Rendered Tallow: Should be golden and clear when hot, turning white and creamy when cooled.

      Proper Temperature for Frying Suet: 275–325°F (135–163°C) for gentle frying.

      This beef suet is easier to cut up by hand than another brand I’ve used in the past. It renders in to a beautiful, creamy white tallow- high yield- ie- for ten pounds of suet, I get approximately 9 pounds of tallow.
