      Each bag of Oxtails will weigh 2 lbs. minimum. The weight on the bag will show as 2 lbs. net weight and this is what you will be charged for. The selling price / purchase price of our Oxtails is based on 2 lbs. per bag. We always do our best to pack over this weight, and we do not charge for this extra weight. You only pay for 2 lbs. per bag, no matter what.

      Shipping transit time is usually 1 to 3 business days.

      How to Cook Organic Grass-Fed Oxtail: Slow Cooking for Deep, Rich Flavor

      Our Organic Grass-Fed Oxtail is the ultimate comfort cut, perfect for slow cooking. This cut, known for its collagen-rich connective tissue, transforms into a hearty, flavorful dish when cooked low and slow in liquid.



      Why Slow Cook or Braise Oxtail?

      Oxtail is a slow-cooking cut because:

      • High Collagen Content: Cooking gently over time allows the rich connective tissue and collagen to break down into gelatin, creating a luxurious, silky texture.
      • Bone-In Flavor: The bones enrich the broth with nutrients and deep flavor as they cook.
      • Moisture is Key: Oxtail needs liquid to stay tender and avoid dryness.

      Slow cooking or braising ensures a melt-in-your-mouth texture and makes the most of this flavorful cut.



      Recipe 1: Clean, Allergy-Friendly Oxtail Recipe

      Ingredients:

      • 2 lbs Organic Grass-Fed Oxtail
      • 3 cups beef or vegetable broth (homemade is best or low sodium, no additives)
      • 1 large onion, chopped
      • 3 cloves garlic, minced
      • 2 large carrots, peeled and cut into chunks
      • 2 celery stalks, cut into chunks
      • 1 teaspoon dried thyme (or 2 sprigs fresh thyme)
      • 1 teaspoon dried rosemary (or 1 sprig fresh rosemary)
      • 1/2 teaspoon salt (adjust to taste)
      • 1/2 teaspoon black pepper



      Instructions

      1. Prepare the Oxtail

      • Pat the oxtail pieces dry with paper towels and season lightly with salt and pepper.

      2. Add Ingredients to the Pot

      • Place the onion, garlic, carrots, and celery in the bottom of your slow cooker, Dutch oven, or Instant Pot.
      • Add the oxtail on top, then pour in the broth and sprinkle with thyme and rosemary.

      3. Choose Your Cooking Method

      • Slow Cooker:

        • Cover and cook on Low for 8–10 hours or High for 5–6 hours, until tender.
      • Stovetop (Dutch Oven):

        • Bring the pot to a boil over medium-high heat, then reduce to a low simmer. Cover tightly and cook for 3.5–4 hours, checking occasionally to ensure the liquid doesn’t evaporate. Add broth as needed.
      • Instant Pot (Pressure Cooker):

        • Secure the lid and set to High Pressure for 50/60 minutes. Allow a 10–15 minute natural release, then quick release any remaining pressure.



      4. Serve

      • Serve the oxtail and vegetables with the cooking liquid as a light broth, or reduce the liquid for a thicker sauce. Pair with steamed rice or mashed potatoes for a comforting meal.

      Recipe 2: Traditional Jamaican Oxtail Stew

      Ingredients:

      • 2 lbs Organic Grass-Fed Oxtail
      • 1 tablespoon olive oil (optional, for stovetop searing)
      • 1 large onion, sliced
      • 2 cloves garlic, minced
      • 2 green onions, chopped
      • 1 Scotch bonnet pepper (whole, for mild heat, or sliced for more heat)
      • 1 teaspoon dried thyme
      • 1/2 teaspoon ground allspice
      • 3 cups beef broth (homemade is best or low sodium, no additives)
      • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
      • 1 (14 oz) can diced tomatoes
      • 2 large carrots, peeled and cut into chunks
      • 1 (15 oz) can butter beans (drained and rinsed)
      • 1 teaspoon brown sugar
      • 1/2 teaspoon salt (adjust to taste)
      • 1/2 teaspoon black pepper



      Instructions

      1. Prepare the Oxtail

      • Pat the oxtail dry with paper towels and season lightly with salt and pepper.

      2. Build the Base

      • Combine the onion, garlic, green onions, Scotch bonnet pepper, thyme, allspice, beef broth, soy sauce, tomatoes, brown sugar, carrots, and oxtail in your cooking pot or slow cooker.



      3. Choose Your Cooking Method

      • Slow Cooker:

        • Add all the ingredients (except butter beans) into the slow cooker.
        • Cook on Low for 8–10 hours or High for 5–6 hours, until the oxtail is tender.
        • Stir in the butter beans during the last 30 minutes of cooking.
      • Stovetop (Dutch Oven):

        • Add all the ingredients (except butter beans) into a large pot. Bring to a boil, then reduce to a low simmer. Cover tightly and cook for 3.5–4 hours, stirring occasionally to ensure the liquid doesn’t evaporate. Add broth as needed.
        • Add the butter beans during the last 30 minutes of cooking.
      • Instant Pot (Pressure Cooker):

        • Place all ingredients (except butter beans) into the Instant Pot. Secure the lid and set to High Pressure for 50/60 minutes.
        • Allow a 10–15 minute natural release, then quick release the remaining pressure.
        • Stir in the butter beans and use the "Sauté" setting for 5–10 minutes to thicken the sauce.



      4. Serve

      • Garnish with fresh green onions or thyme. Serve over rice and peas or steamed white rice for a hearty Jamaican classic.



      How to Know When Oxtail is Done

      • Tender Meat: The oxtail should be fall-off-the-bone tender, with meat that easily pulls away with a fork.
      • Flavorful Sauce: The cooking liquid should be rich and slightly thickened, perfect for pouring over rice.
