      Our Organic Grass-Fed Chuck Roast is a rich, flavorful cut of beef that shines when slow-cooked or braised. With its fat marbling and high levels of natural collagen, this roast transforms into a hearty, fall-apart meal that’s perfect for the whole family.



      Why Slow Cook or Braise Chuck Roast?

      Chuck roast is a slow-cooking cut because:

      •  Chuck contains connective tissue, collagen and marbled fat that requires gentle, low-and-slow cooking in liquid to break down into soft gelatin.
      • Moisture is Key: Cooking in liquid keeps the meat juicy and prevents it from drying out.
      • Flavor is Enhanced: The slow process allows the beef to absorb spices and broth for a deep, savory flavor.

      Recipe #1: Simple Moroccan Slow-Cooked Chuck Roast Recipe

      Ingredients:

      • 24 oz (1.5 lbs) Organic Grass-Fed Chuck Roast
      • 2 tablespoons olive oil (optional, for stovetop searing)
      • 1 large onion, chopped
      • 3 cloves garlic, minced
      • 1 tablespoon ground cumin
      • 1 teaspoon ground coriander
      • 1 teaspoon smoked paprika
      • 1/2 teaspoon ground cinnamon
      • 1/2 teaspoon turmeric
      • 2 cups beef or vegetable broth
      • 1 (14 oz) can diced tomatoes
      • 1/4 cup dried apricots or raisins (optional, for a hint of sweetness)
      • Salt and pepper, to taste
      • Fresh cilantro or parsley, for garnish


      Instructions

      1. Prepare the Chuck Roast

      • Pat the chuck roast dry with paper towels and season generously with salt and pepper.

      2. Add the Ingredients

      • Combine the onions, garlic, spices, broth, diced tomatoes, and dried apricots/raisins in your cooking pot or slow cooker.

      3. Choose Your Cooking Method

      • Slow Cooker:

        • Place the chuck roast into the slow cooker. Add the broth and spice mixture.

      • 1 large onion, sliced
      • 3 cloves garlic, minced
      • 3 large carrots, peeled and cut into chunks
      • 2 celery stalks, cut into chunks
      • 1 teaspoon dried thyme (or 2 sprigs fresh thyme)
      • 1 teaspoon dried rosemary (or 1 sprig fresh rosemary)
      • 1/2 teaspoon salt (adjust to taste)
      • 1/2 teaspoon black pepper



      Instructions

      1. Prepare the Chuck Roast

      • Pat the chuck roast dry with paper towels and season lightly with salt and pepper.

      2. Add Ingredients to the Pot

      • Place the sliced onion, garlic, carrots, and celery in the bottom of your slow cooker, Dutch oven, or Instant Pot.
      • Pour in the broth and add thyme and rosemary.


      3. Choose Your Cooking Method

      • Slow Cooker:

        • Place the chuck roast on top of the vegetables.
        • Cover and cook on Low for 6–7 hours or High for 4–5 hours, until tender.
      • Stovetop (Dutch Oven):

        • Place the chuck roast on top of the vegetables in the pot.
        • Bring to a boil over medium-high heat, then reduce to a low simmer. Cover tightly and cook for 2.5–3 hours, checking occasionally to ensure the liquid doesn’t evaporate. Add broth if needed.
      • Instant Pot (Pressure Cooker):

        • Place the chuck roast on top of the vegetables and secure the lid.
        • Set to High Pressure for 45 minutes. Allow a 10–15 minute natural release, then quick release any remaining pressure.


      4. Serve

      • Remove the roast and vegetables from the pot. Slice or shred the beef and serve with the vegetables and cooking liquid as a savory gravy.

      How to Know When Chuck Roast is Done

      • Fork-Tender: The beef should be so tender that a fork slides in easily, and the meat pulls apart with minimal effort.
