Lamb Kabobs Cooking Instructions & Recipe Idea:
Simple Lamb Kabobs Recipe
Servings: 4
Prep Time: 15 minutes (+ 1-2 hours marinating)
Cook Time: 10-12 minutes
Ingredients:
- 16 oz pack of organic grass-fed cubed lamb (1-2” pieces)
- 1/4 cup olive oil
- 3 tbsp lemon juice (about 1 large lemon)
- 3 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper, to taste
Instructions:
1. Prepare the Marinade:
In a medium bowl, whisk together olive oil, lemon juice, garlic, rosemary, cumin, smoked paprika, salt, and pepper.
2. Marinate the Lamb:
Add the lamb cubes to the marinade, tossing to coat each piece well. Cover and refrigerate for 1-2 hours to allow flavors to develop and the diced lamb to soften. To ensure the very best results for kabobs, do as the Mediterraneans do and marinate overnight in the fridge!
3. Preheat the Grill:
Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.
4. Assemble the Kabobs:
Thread the marinated lamb cubes onto skewers, leaving a little space between each piece for even cooking.
5. Grill the Kabobs:
Place the skewers on the preheated grill over a medium heat / flame.
Grill for about 8 to 10 minutes, turning frequently and checking for doneness with a meat thermometer as you go until the lamb reaches your preferred level of doneness.
For consistent and accurate results — we strongly suggest using a meat thermometer to take out the guesswork!
We suggest taking the Kabobs off the heat at Medium Rare (135°F) to Medium (145°F) at most to preserve flavor and juiciness. Then let rest.
To avoid dry or chewy lamb meat, please avoid overcooking or cooking to well done.
6. Serve and Enjoy:
Remove the kabobs from the grill and let rest for 5 minutes. Serve warm with a squeeze of lemon and your favorite sides.

Simple Lamb Stew Recipe

Cook Time: 1.5 - 2 hours
Ingredients:
- 16 oz pack of organic grass-fed diced lamb (1-2” pieces)
- 2 tbsp olive oil (divided)
- 1 tbsp red wine vinegar or apple cider vinegar
- 3 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
- 1 tsp thyme (fresh or dried)
- Salt and black pepper, to taste
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 tbsp tomato paste
- 3 cups beef or vegetable broth
- 2 medium potatoes, cubed
- 1 bay leaf
Instructions:

Prepare the Marinade:
In a medium sized bowl, combine 1 tablespoon of olive oil, vinegar, garlic, rosemary, thyme, salt, and pepper. -
Marinate the Lamb:
Add the lamb cubes to the marinade, stirring to coat each piece. Cover and refrigerate for at least 1 hour to let the flavors develop. -
Sear the Lamb:
In a large pot or Dutch oven, heat the remaining tablespoon of olive oil over medium-high heat. Add the marinated lamb and brown on all sides, about 5 to 7 minutes. Remove the lamb and set aside. -
Sauté the Vegetables:
In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until softened. Stir in the tomato paste and cook for another 1 to 2 minutes. -
Build the Stew:
Add the lamb back to the pot, then pour in the broth. Add potatoes and bay leaf, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 1.5 to 2 hours or until the lamb meat is tender and the flavors are well-blended.
After 1.5 to 2 hours, check with a fork for doneness. If the lamb pieces are not to the softness / doneness you prefer, keep cooking until they reach the desired softness :) -
Serve and Enjoy:
Remove the bay leaf and adjust the seasoning if needed. Serve warm, garnished with fresh herbs if desired.
